Gluten Free Apple Flatbread Pizza

It’s my favorite time of year: autumn. There are so many things to love about this season, including delicious apples! While this recipe is just slightly more complicated than my other recipes, the result is well worth the effort.

Read on for my delicious, healthy flatbread recipe.


1/4 cup almond flour

1 cup gluten free flour (1:1 works great)

1/2 Tbsp baking powder

1/4 tsp salt

1/2 cup milk

1/8 cup + 2 Tbsp olive oil

1/2 cup onions, diced

1 tsp balsamic vinegar

1/2 tsp minced garlic

drizzle honey

3 Tbsp goat cheese

1 apple, thinly sliced

Preheat oven to 425 degrees. Line a baking sheet with parchment paper.

In a medium bowl, combine flours, baking powder, and salt. Gradually mix in milk and 1/8 cup olive oil until a soft ball forms.

Drop dough onto parchment paper. Roll out to roughly 1/4″ thickness. Bake for 8 minutes.

Meanwhile, heat a drizzle of oil in a small frying pan. Caramelize onions and garlic, stirring often, until soft. Drizzle with vinegar and stir to combine. Set aside.

Remove crust from the oven. Spread with onions and drizzle with oil from the pan. Drop 2/3 of the goat cheese spread out on crust. Top with a single layer of sliced apples. Sprinkle with salt and pepper, and drizzle lightly with honey. Sprinkle with remaining cheese.

Bake 15-20 minutes, until the fruit is softened and the cheese begins to brown.


If you prefer not to use almond flour, this recipe also works with just plain gluten free flour. Simply substitute the quantity of almond flour for flour of your choice.

To make this recipe dairy-free, use almond milk or your other choice of milk.

To chop and slice the ingredients for this recipe with less work, consider using a food processor, mandolin, or slap-chop. You can also purchase frozen chopped onions, to save chopping.

While you can use fresh garlic and a press, I typically purchase a jar of minced garlic to save chopping and squeezing.

To roll the dough without a rolling pin, simply press down with your hands and spread evenly. A tall, straight cup also works well as a rolling pin. Alternatively, to save your hands, you can cover the dough with a layer of wax paper and press a second baking sheet over the dough. Press until it is flat and evenly 1/4″ thick for best results.

This recipe is also delicious with sliced pears, instead of apples. Regardless of the fruit you are using, make sure the slices are thin and evenly-sized so that they cook quickly.

If you follow a vegan diet, feel free to omit the honey or substitute it for another liquid sweetener, such as agave. Instead of goat cheese, experiment with other vegan cheeses. This recipe works best with a creamy, tangy cheese.

To give this recipe a little more flavorful tang, drizzle balsamic over the apple slices before baking.
